Fudgy white chocolate brownies with hidden zucchini, perfect for those little picky eaters that won’t eat their vegetables at dinner.

150g zucchini

200g white chocolate

100g medjool dates, pitted

150g coconut oil

80g (½ cup) wholemeal plain flour

4 eggs

Pinch of salt

½ tsp vanilla extract

THERMOMIX METHOD

Preheat oven to 180°C. Roughly chop the zucchini and place into mixing bowl and chop 5 sec / speed 5, scrape down sides of bowl and repeat if necessary. Pour into a bowl and set aside. Wipe clean the mixing bowl and then place into it the chocolate and mill 10 sec / speed 9. Add dates and chop 10 sec / speed 9. Place zucchini back into mixing bowl and add coconut oil and melt 5 min / 60°C / speed 2. Add flour, eggs, salt and vanilla and mix 20 sec / speed 8. Pour into a square cake tin lined with baking paper and bake for 20-25 mins.

NON THERMOMIX METHOD

Preheat oven to 180°C. Grate zucchini and set aside. Place dates in a processor until finely chopped. Melt the chocolate and coconut oil in a bowl over simmering water in a saucepan. Remove chocolate from heat and stir in vanilla, dates, followed by lightly beaten eggs, zucchini, salt and flour Pour into a square cake tin lined with baking paper and bake for 20-25 mins.
