Chicken, Butternut Squash And Quinoa.

Suitable from 7 months. Suitable for freezing.

Ingredients:

  • 2 tsp olive oil
  • 1/2 red onion, chopped
  • 175g butternut squash, peeled and diced
  • 1 Apple, peeled and diced
  • 80g carrot, peeled and diced
  • 250g chicken thigh, chopped
  • 1 tbsp tomato purée
  • 100 ml of chicken stock
  • 100g quinoa.

Method:

  1. Heat the oil in a pan. Add the onion, squash, apple and carrot. Fry for a few minutes.
  2. Add the chicken and brown with the vegetables. Add the tomato purée and the stock.
  3. Cover and bring up to the boil. Simmer for 30 minutes and stir in the cooked quinoa.
